Pandan Layer Cake




I made this Pandan Layer Cake for mom last 2 week @“Mother's Day “celebration.
This is the 2nd time I made it 
Last weekend i made the 3rd time , my friend order from me the cake after she saw it.
I like Pandan Layer Cake and thought ‘it’, complicated to made it
BUT till I read from a FB friend Soh Pin Tee post…. 

I try it out and i make it!

Here the 3rd time I made it for my friend as a Birthday Cake for her husband.

Pandan Layer Cake
(Recipe adapted from Soh Pin Tee “Facebook”) 
 Chiffon cake
 (A)
4 egg yolk
30g Sugar
60g Corn Oil
60g Milk
1tsp Pandan Paste
90g Superfine Flour
(B)
 4 egg white
¼ tsp Cream of Tartar
50g sugar

Method
1. Mix all the ingredients (A) then sift in flour till all combine.
2. Beat ingredients (B) till stiff.
3. Fold in 1/3 part of beaten egg white into (1) mix well .
4. Add in the remain beaten egg white mix well
5. Pour the mixer into 7” round cake tin.
6. Bake at pre-heated oven at 160C for 35mins.
7. Cool the cake on a wire rack. Slice into 3 equal pieces.

 Pandan Jelly Layer
(A)
300ml coconut milk
400ml pandan water ( 10pcs pandan leaves + water)
100g sugar
1/2tsp salt
8g Jelly Power

Method
Put the above ingredients in a pot cook it ; stir it till boil.

(B)
85g Hoen Kwe flour ( Indonesia green pea flour)
300ml water Method Mix the Hoen Kwe flour with water
Then pour it into the (A) in low heat stir it till The mixture thick & smooth

To assemble pandan layer cake
Use a 8” round cake tin put 2 or 3 scoops of the Pandan Jelly Paste then put in a slice of cake on top the paste. Repeat the rest of Pandan Jelly Paste and cake. After completed all 3 slice , let it cool down  and store cake in the fridge for 3 hours or overnight.

    I wud like to try your recipe for Pandan Layered Cake. I have agar agar powder only. How much do I use for agar agar powder in place of jelly powder, eg. how many grams for agar agar powder.

    1. Hi, Min very sorry for the 'late' reply, lately very busy till no time update my blog. The outer layer is the Jelly layer , after u cook the pandan jelly it like jelly when it cold it will come out like Jelly...try it out!

  8. Your cake is so pretty. I want to try it out but how do i get the pandan water? Do i have to boil the pandan leaves with water first, then take out the pandan leaves and then add the other ingredients? Also how do you make the hearts at the top? They are so pretty!

    1. Hi, thanks..just blend the 10-15 pandan leaf with 200ml water , squeeze out the juice , keep the juice in a container keep in fridge, after 2 - 3days, you can see a layer of pandan paste sink at the bottom.
      The heart shape jelly actually is my heart shape ice cube tray.

  10. Hi...thanks...just blend the 10-15 pandan leaf with 200ml water , squeeze out the juice in a container keep in fridge, after 2 - 3days, you can see a layer of pandan paste sink at the bottom

  12. Hi, to assembe the layer cake, do we have to wait for the pandan jelly paste to be half hard set then only put the layer cake on top the paste? because the pandan jelly is waterly right?

    1. Hi....no need wait for the pandan paste to set..one layer paste one layer cake..continue last layer is paste..then let it cool down.

  13. Hi did you use a springform cake tin? Otherwise how to remove it from the normal tin?

    1. i use normal round cake tin ,outer layer was a jelly type easy to remove.

  14. Do we need to wait till jelly layer cool bit first only put on the cake layer? I wonder will the cake layer bevome swollen like when we soak sponge cake in the hot water or not if we put the cake layer straight on boiled jelly layer?

    1. Hi...Unknown...sorry for the late reply..no need wait till the jelly cool down as it cold down u will difficult to handle it..the jelly was cooked in slow fire not that hot.

  15. Hello... for the 400 ml of pandan water, do you add 200 ml to the pre existing pandan water that is used to make the paste? Thanks!

  16. Hi, Patrina, i prepare the pandan water separately with pandan paste.
    The pandan water (10pcs pandan leaves + 400ml water blend it)

    The Pandan paste
    blend 15pcs of pandan leaves+ 100ml water) store in a container keep in the fridge 3 days,
    you can see a layer of pandan sink at the bottom. that is pandan paste.
