~Lemon Curd (Lemon Filling)~

I like this Lemon curd, i eat with bread....like the taste..not too sweet and not sour with the lemon taste. Use as filling for swiss roll  or cake very nice. The best part is quick and easy.

Ingredients:-
- 2 Lemon Juice
- Lemon zest from the 2 lemon
- 120gm sugar
- 3 eggs (beat and sieve it)
- 50gm butter

Method:-
~ Put all the above ingredients in a aluminium / stainless steel bowl
~ Cook it using double boil method
~ Keep on stir it till the mixer become thick and creamy it took about 15 - 20 mins
~ Cool it down keep in bottle .

~Chilled Soya Bean Curd ~

For the past 2 day, i made this 2 times. This Soya Bean Curd silky smooth to the taste can't stop eating it!! Found this simple , easy and yummy Soya Bean Curd from facebook group.

Ingredients are as below 
Method to cook:- A pack of 1 litre "Home Soy' brand soya bean milk,
  1 teaspoon of jelly powder and a few pandan leaves.
All put in a pot cooked it in slow heat till it boil , ya need to stir!! pour it to small container cool it down ,chilled it for 4 hours .
Serve with "Gula Melaka Syrup" 

 "Gula  Melaka syrup"  ( water + gula melaka + brown sugar + pandan leave)
Thickness and sweetness of the syrup please adjust to your own taste!

~Swiss Roll With Lemon Curd Filling~


This is my 1st Swiss Roll, for the past one week i baked 3 times in a week. Love it because Simple and fast.
Plain cake with 'Lemon curd filling"' (i will shared this simple filling next blog)

Ingredients
(A)
~ 3 egg white
~ 40gm  Sugar
~ 1/4 tsp cream of tar tar
Beat the above till stiff

(B)
~ 3 egg Yolk
~ 15gm sugar
~ 25gm Oil
~ 36ml Milk
~ 60gm Superfine Flour
combine all the ingredients (B) mix well

*this swiss roll recipe was using chiffon method so fold in  the beaten egg white in to mixture( B)
*I am using 8"x 11" tray, line the tray with baking paper
*Pour the batter into the prepared tray slowly, use spatula spread it to the edge and even it
*Bake in preheated oven @160C for 18mins or till it golden brown.
*Over turn the cake to a rack with another baking paper, peel off the lining paper
*Leave the cake cool down , spread with filling as you like
* Roll up the cake and wrap with cling wrap. Chill the cake for 30mins
*Cut into slice , this recipe can cut about 8 pcs
