~Traditional Mooncakes~传统月饼



Wishing all of you a Happy Mid-Autumn Festival. Today posting the last mooncake i made, is Traditional Mooncake with Tau Sar and Lotus paste filling.Everyone seem happy sharing their homemade mooncake all over the blog, facebook.

This traditional mooncake i using the same dough recipe as i do my piggy mooncake.
Dough
300gm  Plain flour
180gm  Golden Syrup
6gm      Alkaline Water
 76g      Cooking oil

Filling 
Lotus paste or Tau Sar paste ,melon seed, store bought

Egg wash
1 egg Yolk + 1 tsp water 

Method
-Mixed the Golden Syrup, alkaline water and cooking oil together, sift in Plain flour , combine all knead it to form a soft dough, covered it and let it rest for 3-4 hours. divide the dough in 20gm each
- Mixed the paste with some melon seed , shape it in a ball size 35gm each 
- Wrap the filling with the dough, put in mooncake mould, then press it out, place on baking tray
- Bake at preheated oven @180C for 8mins, take out let it rest for 15mins, apply egg wash
- Bake again @160C for 15-20mins till it turn brown.
- Let it cold down , keep in container for 2-3days to let the skin turn soft.

~Snowskin Mooncakes~(PingBi)


Snowskin mooncakes always the last batch of mooncake i made. This year i really like the color ,all are natural colors. I use pandan for the green,  red yeast powder for red and blue pea flower for blue!

Snowskin mooncakes are easy to made no baking required. Get the paste and snowskin premix flour at the baking store follow the premix instruction. Normally  premix flour add in shortening and cold water. if u wish to put color for it mix the color with the cold water then mix well with the flour till form a smooth dough, wrap it with paste ,put in mooncake mould or jelly mould to get the imprint and push it out from mould. Chilled it before serving. It's simple , Try it out!!

~Piggy Mooncakes~



"Piggy mooncakes" very cute right???...hahaha....'It' very popular among bloggers, a lot bloggers bake and  post it....i also follow ! Thanks to Nasi Lemak Lover and Anncoo for sharing this cute piggy mooncakes recipe .The step by step photo make us easy to follow, i really enjoy baking this 'piggy'!

Recipe can make 5 piggy
Dough
-150gm Plain flour
-90gm Golden syrup
-3gm Alkaline water
-38gm Oil
** Mixed the above ingredients form a smooth dough , let it rest for 2-3 hours,
    then divide the dough 50gm each

Filling 
350gm Lotus paste (store bought)
20gm melon seed 
** mixed the melon seed with the lotus paste, divide the paste 70gm each

Egg Wash 
1 egg yolk mix with 1/2tsp water

Tools
a round 1/8 teaspoon, a satay stick, plastic sheet, Black beans for the eyes

How to 'shape' and 'making' the piggy please refer the link, they have very clear step by step

I bake at preheated oven @180C for 8mins, take out let it rest for 15mins, apply egg wash
Bake again @160C for 15-20mins till it turn brown.
Let it cold down , keep in container for 2-3daysto let the skin turn soft


It's really fun making this 'piggy mooncakes', i hope you all enjoy it too!!

~Shanghai Mooncake~ 上海月饼



Mooncake/ Mid Autumn Festival just round the corner, everyone busy bake and post their mooncake, me too busy baking!! Every year i baked Shanghai mooncake, sharing here again the photo and recipe again .

~Chocolate Bottom Banana Cake~


When i saw this cake in Wen's Delight, immediately in my mind i want bake this cake....hahaha
After i bake it, Yes, very soft the banana and chocolate combination "I Like it". I make some modify
i use salted butter and ignore the salt and i use almond nibs instead of walnut.

Ingredients:-
110gm butter (room temperature)
120gm sugar
1Egg (beaten)
1tsp Vanilla
5-6 ripe banana (mashed it ,i use Pisang Raja)
190gm Cake Flour
1tsp Baking Powder
1tsp Baking Soda
2Tbsp Chocolate Powder
2Tbsp Milk (to add moisture to the chocolate bottom)
Some Chocolate chip and Almond nibs

Method:
1.Sieve cake flour, baking powder and baking soda together and set aside
2.Using mixer cream the butter and sugar till fluffy.
3.Add in beaten egg, follow by vanilla then bananas, till all well mixed . off the mixer
4.Add in sifted flour (1), mix well  with a spatula.
5.Divide the batter into half , add in chocolate powder and milk.
   Pour this chocolate mixture into a square tin
6.add the other half mixture on top the chocolate mixture, sprinkle chocolate chips and almond on top
7. Bake in pre-heated oven @ 175C for 30mins

~~Double Chocolate Cupcakes~~




I bake this Double chocolate cupcakes 3 times in August, for friends birthday as a gift. 
I like the texture , rich chocolate taste and moist. So try it out if u are chocolate lover.
Simple , fast and taste nice.

Ingredients:-
-100gm butter
-120gm sugar
-250gm flour
-20gm chocolate powder
-2tsp Baking Powder
-1/2 tsp Baking Soda
-2 eggs
-160ml milk
-100gm Choc chips

Method:-
- Put butter and sugar in mixer beat medium speed 
- Sift flour, chocolate powder, Baking powder and Baking soda set aside
- Add in eggs, in beaten butter follow by milk
- Add in sifted flour, chocolate powder, Baking powder and Baking soda 
- Lastly add in chocolate chips, mixed well
- Scoop in the batter in cupcake cups, put some chocolate and almond on top
- Bake in pre-heated oven @ 180C for 25mins
~Yields 16 cups~

~~Donuts~~

 
      Donuts again.....Kids love donuts with coated chocolate!! Try it out your kids sure love it!
   

Ingredients:-
- 200gm    Flour
- 1Tbsp     Milk Powder
- 4gm        Yeast
- 80ml       Milk (warm)
- 1Tbsp    Sugar
- 20gm     Margarine
- Pinch of salt
~~oil for Frying
~~100gm semi sweet cooking chocolate (Melt it)
~~ some chocolate rice

Method:-
1) Combine warm milk and yeast in mixing bowl put aside till bubbles form.
2) Add in Flour, Milk powder, sugar, slat mix to form a dough, if too dry add some water ,
or too sticky add some flour knead till smooth , let it rise (30mins)
3) Punch down the dough add in margarine, knead till smooth again.
4) Roll out the dough use donut cutter cut out the donut.
5) Place the donut in a plate, cover and let it rest for 20mins
6) Heat up oil , fry the donut till golden brown
7) Coated with melt chocolate and chocolate rice




~~Curry Chicken~~



I know i have been promise to post this curry chicken when i post the roti jala, a year ago.
Time passed very fast...day by day .....Me busy + lazy  !!  Hahaha...
Since this month didn't post any new post , so put other thing aside post " curry chicken ".
As i told my friends is easy just i don;t like 'tumis the rempah". Those like curry chicken try out this recipe.


Rempah Ingredients:-
200gm (6pcs)   Big onions
5pcs                 Garlic
50  (8pcs)         Fresh Red chilli
(Blend the above with cooking oil)
1 cinnamon stick (2 inch)
2 Tbsp Chilli boh (blended dried chilli paste)
1 Tbsp Corrainder powder
1 tsp jintan manis mixed with jintan putih (white cumin seed & sweet cumin seed)
(don’t add too much as it will make the curry bitter)
1 packets Babas curry powder
100 ml Thick coconut milk

1 Chicken (Cut and clean)
8 potatoes (boil , peel off skin , cut into small piece)

Method
1) Pour oil in wok.(2 cups)
2) Tumis cinnamon stick for a while under low heat
3) Add blended onions / garlic and fresh chilli
4) Tumis for a few mins till water evaporate
5) Add in chilli boh, ketumbar , jintan manis/putih, babas curry powder
6) Make sure tumis under slow fire (use higher heat in the beginning when add in onions etc but when
wok is hot use low heat till the end)
7) And remember to keep stirring else it will burn.
8) Tumis until fragrant (will be able to see the a layer of oil separated from the rempah)
9) Add in the chicken, potatoes and 1 cup of water , till the chicken cooked.
10) Lastly add in sugar and salt to taste then finally coconut milk.

~Vietnamese Spring Rolls~ (Cha Gio)





"Vietnamese Spring Rolls" most of you sure refer to the one using Vietnamese rice paper , fresh vege and prawn. I called it Fresh Vietnamese Spring Roll.
This is the 'fried' version of Vietnamese Spring Rolls (Cha Gio), it suppose using the rice paper to wrap and fried but i couldn't found it at my nearby store so use normal spring rolls wrappers. 1st trial this type of spring rolls at a French man house , we all love it, eat a lot, the combination of the lettuce, mint leave and chillies with the spring rolls are so 'perfect'!!! 2nd trial, i learn it......and i'm sure "my buddy "...u all miss it is it??? ya..since 2011 our gathering , i didn't do it!!! Last week, i miss it sooooo much..so buy the ingredients and do it...

What  you need ?

Ingredients
1 small Yam (shredded , deep fried )
1 small Carrot (shredded)
2 pcs dry black fungus (soaked and cut in small strip)
1 bundle glass noodles (tang hoon, soaked it soft cut in small strip)
300gm Minced meat

Seasoning:
ground  [4 shallots, 2 garlic, spring onion (use the white part), pepper ]
1 tsp fish sauce, 1tsp Salt

Method
mix well all the ingredients with seasoning.
wrapped the 'well mix ingredients, with spring rolls sheet and deep fried it.

Chillies :
 red chillies, garlic (chopped it fine) mix with small lime juice , sugar and fish sauce.

Note:-Use Vietnamese rice paper if u can get it, can replace the yam with potato, for those vegetarian replace the minced meat with soft tofu


Serve it hot , when eat wrap the spring roll with lettuce , mints and dip with chillies .

~Soft Donut~



It's been 3 months plus i stop update my blog,  due to busy!I I am fine  still cook and bake but same simple dish, no time to try out new recipe. I glad that i can blog 10 months continuously and stop for 3 months. Ya, is not easy to cook or bake , take photo , edit, and blog. i hope i can continue this blog to record what i had cook and bake and sharing with all of you. 

 I and my friend been trying out make donut, 1st  and 2nd  trial , i not satisfied !!i like the soft texture of donut and i finally found this recipe.

Ingredients:-
Flour                                                    130g
- Milk Powder                                        1 Tbsp
- Yeast                                                     3g
- Milk (room temperature)                      70g
 -Sugar                                                    1Tbsp
- Pinch of salt
- Sweet potato (cooked , mashed)     60g
- Butter                                                   20g


Method:-
1. Dissolve yeast in milk, put aside
2. Place flour, milk powder, sugar and salt in a mixing bowl, mix well.
3. Add in yeast mixture in the mixing bowl, mix well till from a dough.
4. Sprinkle some flour on table top, knead the dough till smooth. Let it rise for 1 hour
    (Dough should be double up after 1 hour)
5. Punch down the dough add in mashed sweet potato and butter knead till smooth again,
    let it rest for 20mins.
6. Roll out the dough and cut out a small dough (30gm each), use donut cutter cut out the shape.
7. Place the donut in plate, cover and let it rest for 30mins.
8. Deep fry the donut in heated oil till golden brown.
9. Coated with fine sugar or melt chocolate

"Serve it hot and eat the same day to get the soft texture"

~Nyonya Pengat~


Long time i didn't update my blog because my laptop got problem in office no time to edit the photo. After Chinese New Year also keep on busy, house routine work, cook...but i bake less..will try to post 2 cakes i bake during CNY....Hope i can upload this few days...This post should be posted last month. I cook this nyonya pengat during chinese new year "Chap goh meh'. (Last day of Chinese New Year)

Ingredients:

(A)
*1 cup of Yam
*1 cup of orange sweet potato
*1 cup of Yellow sweet potato
 ~ Peeled the Yam and potatoes skin cut into cubes

(B)
*4 -5 Banana (Pisang Raja)
*1 cup of water
*2Tbsp Sugar
*pinch of  Salt
~Peeled the bananas skin, cut in 1 inch each


(C)
*3 pcs Pandan Leave
*300ml Coconut Milk
*100ml-150ml water


Method:-
1. Steam the yam and potatoes till cooked (it took abt 8-12mins)
2. Bring to boil 1 cup of water with 2 Tbsp sugar and pandan leave, lower the fire add in bananas cook for 10mins. Then pour in coconut milk and a pinch of salt, let it simmer for 5 mins.
3. Add in 100-150ml water adjust according to the thickness as you prefer.
4. Lastly add in cooked potatoes and yam, simmer for another 2mins.

It can be serve in hot or cold.

~Pineapple Tart~ 黄梨酥

Chinese New Year almost end, so how was yours CNY celebration? I'm sure everyone busy for visiting, re-union , chatting, me too very busy .
Ya, "Pineapple tart", still not too late to post last one of my CNY cookies. I never thought i will bake this pineapple tart myself BECAUSE in my mind IT IS Difficult and a lot 'work".......But i  come across a lot bloggers bake this  use ready made pineapple jam , so this year i TRY IT OUT!!!!........And the result is this pineapple tart  the first cookies FINISH, GONE.....hahaha all say NICE!!


(Recipe adapted from Anncoo Journal blogger)
Ingredients:-
400gm Pineapple Jam (store bought)
** Roll into small round shape 5gm each , my tart mold small size

For the Pastry
~180g Plain flour
~20g Corn flour
~40g Icing sugar
~1 Egg yolk (lightly beaten with 1Tbsp ice water, 1/2tsp vanilla extract)
~150g Cold butter (cut in small cube)
~1/2 tsp Salt

Method:
** Sift plain flour, corn flour and icing sugar in a large mixing bowl , mix well.
** Put the cut butter in the mixing bowl rub with flour using fingertips till butter coated with flour .
** Pour in beaten egg yolk, slowly mix the ingredients to a soft dough. (do not over knead) Add some flour if dough too soft. Put dough in the fridge for 20-30 mins to firm up.
** Roll pastry about 5mm thickness, cut into shape with a pineapple tart mold.
** Place the pineapple jam on the center of the tart. Cut small strips to form a cross pattern on top the tarts.
** Place on baking tray bake @170C 20mins.
** Remove from oven place the tart on wire rack.
**Cool down the tarts  and store in an airtight container.

~Peanut Cookies~(花生饼)



Peanut cookies is the must have item in my house....my families member are peanut lover!!!
By now everyone should be finish clean up the house, hang up big red lantern.
I not yet post all my CNY cookies....no time to blog. 
i hope i can post all before CNY!

Here the recipe for this peanut cookies:-
**300gm Ground Peanut ( i bought ready ground peanut)
**400gm Flour (i use 200gm normal flour & 200gm superfine flour)
**180gm icing sugar
**1 tsp salt
**220ml Peanut Oil
**1 egg for brushing

Method:_
-Sift icing sugar and Flour in a big mixing bowl
-Add in ground peanut and salt mix well
-Add in oil mix well till form a dough, put aside for 30mins
-Roll the peanut dough into a small ball size (5/6gm each) place on baking tray
-Brush egg on top each .
-Bake at preheated oven@ 160C for 20mins
-Cool down the cookies and keep in airtight container

~Butter Cookies~

Chinese New Year just round the corner, everyone are busy clean up every corner of the house , decoration . Some are busy baking cookies, re-union dinner praparation, and also shopping .So what you have done?? still have a few days time for last minute...hahaha
Ya, this year i bake quite a lot cookies, Green pea cookies, German cookies, Almond cookies , Peanut cookies and this butter cookies.  This another type of melt in mouth cookies. Still have time to try it out!!!

Ingrdients:-
~250gm Butter
~80gm Icing Sugar
~235gm  Plain Flour
~50gm Corn Flour
~30gm Custard Powder
~1 1/2 tsp Baking powder
~1/2 tsp Vanilla Extract
~ Cherries for decoration
** ( Sift together Plain flour, Corn Flour, Custard Powder and Baking powder)

Method
1. in a mixing bowl beat butter and icing till light
2. Add in Vanilla extract  and follow by all the sifted flour mix well
3. Put the soft dough in piping bag with flower tip,pump out flower shape on a baking tray
4. put a small cherry on top for decoration
5. Bake at pre-heated oven 180C for 15mins

~Almond Cookies~


By this time , i think  lot of you already complete baking cookies right?.....this almond cookies recipe keep quite long time, last week when i clean up my fridge found out i still have 100gm ground almond , so in my mind 'ting'...why not try this out...i add some almond nibs ...is another simple cookies! If u like almond or nuts you should like this....so try it out!

Ingredients:-
~180gm  Flour
~70gm  Icing sugar
~100gm Ground Almond
~50gm Almond nibs
~1/4 tsp salt
~1tsp baking powder
~120gm Corn Oil (i use sunflower seed oil)
~1 Egg for Brushing

Method
1. Sift together , flour and icing sugar.
2. Add in ground almond, almond nibs, salt and baking powder mix well.
3. Add in oil mix till form a soft dough.
4. Shape into small balls (ard 6 gm each), place on baking tray.
5. Brush with egg yolks and put some almond nibs as toppings.
6. Bake in preheated oven @ 170C 15-18mins
7. Cool down and store in airtight container

~German Cookies~

German cookies, after the 1st try...
I'm love in it!! Melt in the mouth cookies,off course you need to use good butter!!! 


German cookies very popular on the web because of it 'melt in the mouth' texture. ingredients and method are so simple!!
Ya,,,,i like simple thing...simple are the best!! 

German cookies always in my Chinese New Year cookies list....





So..for those not yet bake cookies .Try it out! You won't regret!


Ingredients:
*125g butter, soften at room temperature 
*40g icing sugar
*125g potato flour / potato starch (马铃薯粉/上等生粉/风车粉/太白粉)

*80g  SuperFine Flour /low protien flour 

Method
~ Beat butter and icing sugar till fluffy and light in color.

~ Sift in potato flour and Superfine flour, mix well till become soft dough.
~ Roll into small ball, arrange on lined baking pan and press lightly with a fork. 
~ Bake in preheated oven at 170C for 15 minutes. 

(do not bake till cookies turn brown).
(Put some flour if the dough too sticky )

~~Green Pea Cookies~~ (青豆饼)


Yeah...Chinese New Year is coming ,i'm sure everybody is busy shopping, spring cleaning, baking cookies.A lot bloggers, friends(in FB),,all already start baking and post their cookies....for the past week me busy buy the ingredients ...This Green Pea Cookies requested by my mom, is the 1st cookies i bake for this year...will post more later..stay tune!!!

Here u go the making and ingredients need.............
Green Pea Cookie Recipe (Recipe from Facebook mama group ,i modify a bit)
~300g ground green pea
~175g icing sugar (sifted)
~400g flour (i use 200g super fine flour + 200g all purpose flour, sifted)
~1/2 tsp salt
~250g peanut oil
~1 small egg (for egg wash)

Method:
1. Place ground green pea in a large bowl. add in salt  , icing sugar and flour .Mix well with spoon.
2. Add oil gradually and knead into a dough . (If the dough is still crumbly, add more oil )
3. Roll the dough into small round shape and place on baking tray.
4. I Use a pen cover to make small round on top the  cookies
5. Brush the cookies top with egg wash.
6. Bake in pre- heated oven @ 170Celcius for 18-20 minutes.
7. Remove from oven and cool the cookies completely 
8. Store the cookies  in airtight containers.

Butter Lemon Cake with Crispy Almond Slice


After rest for so many days is time to start update my blog before friends ask why no new post........I still bake and cook....bake some cupcakes and cream puff..And also need to start bake CNY cookies. So 2013 first post "Butter lemon cake with almond slice topping" Try it out you will know the taste....i Love it!!!


Ingredients:-
*100gm    Butter
*70gm     Castor sugar 
*2 Eggs
*45ml      Milk
*120gm   Cake flour (sifted)
*2 Tbsp   Lemon Juice
*1 tsp      Scrape Lemon Skin

Method:-
- Beat butter and sugar till stiff/ white
- add in eggs mix well 
- add in  milk mix well
- pour in cake flour stir well
- lastly lemon juice and scrape lemon skin mix well
- pour into cake tin bake @ preheated oven 180C for 35-40mins



The Almond topping  
melt some butter mix with the almond slice then add in 2 tablespoon honey
Once the cake baked spread the almond slice on top the cake and bake till almond golden brown. (5-8mins)
