~Vietnamese Spring Rolls~ (Cha Gio)





"Vietnamese Spring Rolls" most of you sure refer to the one using Vietnamese rice paper , fresh vege and prawn. I called it Fresh Vietnamese Spring Roll.
This is the 'fried' version of Vietnamese Spring Rolls (Cha Gio), it suppose using the rice paper to wrap and fried but i couldn't found it at my nearby store so use normal spring rolls wrappers. 1st trial this type of spring rolls at a French man house , we all love it, eat a lot, the combination of the lettuce, mint leave and chillies with the spring rolls are so 'perfect'!!! 2nd trial, i learn it......and i'm sure "my buddy "...u all miss it is it??? ya..since 2011 our gathering , i didn't do it!!! Last week, i miss it sooooo much..so buy the ingredients and do it...

What  you need ?

Ingredients
1 small Yam (shredded , deep fried )
1 small Carrot (shredded)
2 pcs dry black fungus (soaked and cut in small strip)
1 bundle glass noodles (tang hoon, soaked it soft cut in small strip)
300gm Minced meat

Seasoning:
ground  [4 shallots, 2 garlic, spring onion (use the white part), pepper ]
1 tsp fish sauce, 1tsp Salt

Method
mix well all the ingredients with seasoning.
wrapped the 'well mix ingredients, with spring rolls sheet and deep fried it.

Chillies :
 red chillies, garlic (chopped it fine) mix with small lime juice , sugar and fish sauce.

Note:-Use Vietnamese rice paper if u can get it, can replace the yam with potato, for those vegetarian replace the minced meat with soft tofu


Serve it hot , when eat wrap the spring roll with lettuce , mints and dip with chillies .
Try it out.....You will like it!

~Soft Donut~



It's been 3 months plus i stop update my blog,  due to busy!I I am fine  still cook and bake but same simple dish, no time to try out new recipe. I glad that i can blog 10 months continuously and stop for 3 months. Ya, is not easy to cook or bake , take photo , edit, and blog. i hope i can continue this blog to record what i had cook and bake and sharing with all of you. 

 I and my friend been trying out make donut, 1st  and 2nd  trial , i not satisfied !!i like the soft texture of donut and i finally found this recipe.

Ingredients:-
Flour                                                    130g
- Milk Powder                                        1 Tbsp
- Yeast                                                     3g
- Milk (room temperature)                      70g
 -Sugar                                                    1Tbsp
- Pinch of salt
- Sweet potato (cooked , mashed)     60g
- Butter                                                   20g


Method:-
1. Dissolve yeast in milk, put aside
2. Place flour, milk powder, sugar and salt in a mixing bowl, mix well.
3. Add in yeast mixture in the mixing bowl, mix well till from a dough.
4. Sprinkle some flour on table top, knead the dough till smooth. Let it rise for 1 hour
    (Dough should be double up after 1 hour)
5. Punch down the dough add in mashed sweet potato and butter knead till smooth again,
    let it rest for 20mins.
6. Roll out the dough and cut out a small dough (30gm each), use donut cutter cut out the shape.
7. Place the donut in plate, cover and let it rest for 30mins.
8. Deep fry the donut in heated oil till golden brown.
9. Coated with fine sugar or melt chocolate

"Serve it hot and eat the same day to get the soft texture"

~Nyonya Pengat~


Long time i didn't update my blog because my laptop got problem in office no time to edit the photo. After Chinese New Year also keep on busy, house routine work, cook...but i bake less..will try to post 2 cakes i bake during CNY....Hope i can upload this few days...This post should be posted last month. I cook this nyonya pengat during chinese new year "Chap goh meh'. (Last day of Chinese New Year)

Ingredients:

(A)
*1 cup of Yam
*1 cup of orange sweet potato
*1 cup of Yellow sweet potato
 ~ Peeled the Yam and potatoes skin cut into cubes

(B)
*4 -5 Banana (Pisang Raja)
*1 cup of water
*2Tbsp Sugar
*pinch of  Salt
~Peeled the bananas skin, cut in 1 inch each


(C)
*3 pcs Pandan Leave
*300ml Coconut Milk
*100ml-150ml water


Method:-
1. Steam the yam and potatoes till cooked (it took abt 8-12mins)
2. Bring to boil 1 cup of water with 2 Tbsp sugar and pandan leave, lower the fire add in bananas cook for 10mins. Then pour in coconut milk and a pinch of salt, let it simmer for 5 mins.
3. Add in 100-150ml water adjust according to the thickness as you prefer.
4. Lastly add in cooked potatoes and yam, simmer for another 2mins.

It can be serve in hot or cold.

~Pineapple Tart~ 黄梨酥

Chinese New Year almost end, so how was yours CNY celebration? I'm sure everyone busy for visiting, re-union , chatting, me too very busy .
Ya, "Pineapple tart", still not too late to post last one of my CNY cookies. I never thought i will bake this pineapple tart myself BECAUSE in my mind IT IS Difficult and a lot 'work".......But i  come across a lot bloggers bake this  use ready made pineapple jam , so this year i TRY IT OUT!!!!........And the result is this pineapple tart  the first cookies FINISH, GONE.....hahaha all say NICE!!

Ingredients:-
400gm Pineapple Jam (store bought)
** Roll into small round shape 5gm each , my tart mold small size

For the Pastry
~180g Plain flour
~20g Corn flour
~40g Icing sugar
~1 Egg yolk (lightly beaten with 1Tbsp ice water, 1/2tsp vanilla extract)
~150g Cold butter (cut in small cube)
~1/2 tsp Salt

Method:
** Sift plain flour, corn flour and icing sugar in a large mixing bowl , mix well.
** Put the cut butter in the mixing bowl rub with flour using fingertips till butter coated with flour .
** Pour in beaten egg yolk, slowly mix the ingredients to a soft dough. (do not over knead) Add some flour if dough too soft. Put dough in the fridge for 20-30 mins to firm up.
** Roll pastry about 5mm thickness, cut into shape with a pineapple tart mold.
** Place the pineapple jam on the center of the tart. Cut small strips to form a cross pattern on top the tarts.
** Place on baking tray bake @170C 20mins.
** Remove from oven place the tart on wire rack.
**Cool down the tarts  and store in an airtight container.

~Peanut Cookies~(花生饼)



Peanut cookies is the must have item in my house....my families member are peanut lover!!!
By now everyone should be finish clean up the house, hang up big red lantern.
I not yet post all my CNY cookies....no time to blog. 
i hope i can post all before CNY!

Here the recipe for this peanut cookies:-
**300gm Ground Peanut ( i bought ready ground peanut)
**400gm Flour (i use 200gm normal flour & 200gm superfine flour)
**180gm icing sugar
**1 tsp salt
**220ml Peanut Oil
**1 egg for brushing

Method:_
-Sift icing sugar and Flour in a big mixing bowl
-Add in ground peanut and salt mix well
-Add in oil mix well till form a dough, put aside for 30mins
-Roll the peanut dough into a small ball size (5/6gm each) place on baking tray
-Brush egg on top each .
-Bake at preheated oven@ 160C for 20mins
-Cool down the cookies and keep in airtight container

~Butter Cookies~

Chinese New Year just round the corner, everyone are busy clean up every corner of the house , decoration . Some are busy baking cookies, re-union dinner praparation, and also shopping .So what you have done?? still have a few days time for last minute...hahaha
Ya, this year i bake quite a lot cookies, Green pea cookies, German cookies, Almond cookies , Peanut cookies and this butter cookies.  This another type of melt in mouth cookies. Still have time to try it out!!!

Ingrdients:-
~250gm Butter
~80gm Icing Sugar
~235gm  Plain Flour
~50gm Corn Flour
~30gm Custard Powder
~1 1/2 tsp Baking powder
~1/2 tsp Vanilla Extract
~ Cherries for decoration
** ( Sift together Plain flour, Corn Flour, Custard Powder and Baking powder)

Method
1. in a mixing bowl beat butter and icing till light
2. Add in Vanilla extract  and follow by all the sifted flour mix well
3. Put the soft dough in piping bag with flower tip,pump out flower shape on a baking tray
4. put a small cherry on top for decoration
5. Bake at pre-heated oven 180C for 15mins
