Asam Pedas Fish
I like hot, spicy & sour food, this 'asam pedas' is a very appetizing dish. If you like Laksa, i'm sure you like this "Asam Pedas Fish", simple and easy to cook. For those not familiar with the name of ingredients can go to market 'rempah store" buy from them ..tell them what u want to cook they will sell you & also teach you.
What u need are as below:-
1kg Fish (Ikan kembung)
10 shallots
2 big Onions
10Fresh Red chillies (seeded)
1" Lengkuas
3 Serai ( Lemon Grass)
5 stalks Daun Kesom (Laksa Leaf) ** wash
1 Bunga Kantan ( Ginger Flower) ** cut into half
2" Balacan ( Shrimp paste)
3 pcs Asam Keping (Dried Tamarind Skin)
1 Small Pineapple
To Prepare it:-
*Cut and wash the fish
*Cut the Pineapple in small pieces(if lazy to cut , buy from Fruits stall )
*Peel shallots and Onions .
*Bland Shallots, Onions, Red Chillies, Lengkuas And Serai.
To Cook it:-
*Bring to boil a pot of water (1liter)
* Simmer the heat add in Pineapple , blended rempah, Daun kesom, Asam keping, Bunga Kantan ,Balacan
(Dump in all the ingredients accept the fish)
*Normally i cook about 20-30mins then add in fish cook for another 15mins put some sugar and salt to taste. And serve it hot.
EASY?? Try it out!

Cream Puff
I love to bake, its become part of my life when i got free time i look for new recipe try out to bake new 'product'...Cream puff....not my favorite but all my friends, nephews even my mom like it.
This is not the 1st time i bake cream puff. My friend told me very difficult to make ,she do a few times the cream puff cannot 'puff up'. until one day i ask a uncle (my father friend).he pass to me very detail step by step so i try it out .Eh....very nice! i use whipping cream as the filling instead of custard cream.
My little nephew always ask "ku ku, pls make for me cream puff, i want a lot a lot cream"...hahaha
Recipe
for the Puff ( 28 puffs)
* 100ml water
* 50ml milk
* 60g butter
* 100g flour (50gm Plain Flour and 50gm Self Rising Flour)
* 3eggs
Method
- Put water , milk and butter in a sauce pan bring to boil.
- Lower heat add in flour and stir with a wooden spoon till all combine become a smooth dough.
- Remove from heat set aside for 10 mins till batter cool down to 65C.
- Add in beaten egg one at a time keep stir until mix well with the mixture, follow by 2nd egg and 3 rd egg.
** the mixture must be not too hard or too dry or too wet.
- Put the mixture into a piping bag .pipe on a baking tray lined with baking paper.
- Bake at 200C preheated oven for 18- 20mins
- Cool down the puff on a wired rack , use knife cut a small hole on each puff.
Whipping Cream Filling
Normally i use 100ml non-dairy whipping cream whipped it
Sometimes i just put ice cream as filling.
Chilled the cream puff in fridge before serve.

Dragon Fruits Jelly
Jelly is a simple dessert!
I believe it is everybody all time favorite no matter young or old.
So Jelly always appear in my fridge.
I don't like using Coloring or Flavours....
if don't have Dragon Fruits i just did the plain jelly
"Jelly powder+pandan leaf +rock sugar"
For this Dragon Fruits Jelly we just need
*1 Red Dragon Fruits (chopped finely or use folk mashed it)
*15g Jelly Powder (i use Pearl Mermaid Agar Agar powder)
* 180g Sugar or Rock Sugar
* 1.5L Water
Method:-
~ Bring the water to boil.
~ Mix agar agar powder and sugar together then pour into the boiling water,
lower heat stir well . Let it simmer for 5 mins.
~Turn off fire pour in Dragon fruits puree.
~ Stir well and pour into mould.
~ Let it cool down then chill in the fridge.

Homemade Pizza
Homemade "Hawaiian Pizza' is my favorite!!
When i don't know what to cook this will appear on my mind!
Homemade always the best i put a lot Pineapple, Pitted Olive and Mozzarella cheese....ehm...Yummy!!
I bought Mozzarella Cheese from baking ingredients shop is really cheap compare with hypermarket!
So pizza lover if u have a oven at home try it out!
(A) Pizza Dough
250g-High Protein Flour
10g -Sugar
4g -Salt
5g -Instant Yeast
120ml - Luke warm water
15ml - Olive oil
- Put Flour, sugar , salt and yeast in a large mixing bowl ,slowly add in water till become a dough.
- Knead the dough for 10-15 mins then add in Olive oil, knead again till dough smooth.
- Put the dough in bowl wrap with cling wrap for 50mins let it rise.
- Take out the dough from bowl punch down the dough let the air come out
- Use rolling pin roll it in round shape on a pizza pan let it a side for another 30mins.(use folk poke some hole on the flat dough)
(B) Pizza Sauce
1 Can Tomato Puree
Mixed Italian herbs 3 TBSP
Olive oil 1 tsp
Black pepper 1 tsp
Fresh Parsley (Chopped finely)
- Mixed all the above
(C) Toppings:
Sausage, Pineapple (Can , Cube), Onion, Green Capsicum, Black Pitted Olive ,
Shredded Mozzarella cheese
Method:-
-Spread the Pizza sauce on top the pizza dough follow by some cheese then
arrange evenly sausage, pineapple, onion, green capsicum , black olive on top
-Bake it in pre heat oven 200C for 20mins take out add some Shredded Mozzarella cheese on top
bake it another 5-8mins till cheese melt.
Usually i made some salad,
Tomatoes, Capsicum, Iceberg Lettuces with Thousand Island Dressing

Cranberry Almond Cupcakes

Why Cranberry not Raisin?
Want to clear off cranberries so long keep in the fridge!! Hehehehe.....
This recipe from "孟老师" book. I Like the slice almond on top the cake
and the cranberry after bake more taste.....is a simple cup cakes.
I made it for my breakfast and tea snack.
Ingredients:
(A)
1. Almond slice 30g
2. Dried Cranberries 30g
(B)
1. Unsalted butter 80g
2. Icing sugar 60g
3. 2 eggs
4. 3Tbsp milk
5. Super soft flour 50g
6. BP 1/2 tsp
Method:-
- Bake almond slice @ 150C for 10 mins let it cool.
- Blend almond slice and dried cranberries together
(If don't have blender or food processor chopped it with knife)
- Put Butter and icing sugar in mixer , beat it with high speed till fluffy,
add in egg one by one follow by milk beat well then sift in flour mix it ,
lastly add in blend almond and cranberry mix it well.
- Scoop the batter into the paper cup...put some almond slice and cranberries on top
- Bake in Pre-heat oven @180C 20-25 mins
